Bread flour: cups to grams

Bread flour has more protein than all-purpose flour, which builds the stronger gluten you want in chewy loaves, bagels and pizza dough. A spooned-and-levelled cup weighs the same as all-purpose: about 120 g.

What to buy

It's sold as strong white flour or strong bread flour in the UK, and as bread and pizza flour in Australia. Look for 12–14% protein on the label.

Weigh your water too

Bread recipes are usually written as a ratio of water to flour. With both in grams (1 ml of water weighs 1 g) you can scale a dough up or down exactly.
