Granulated sugar: cups to grams

Granulated sugar is one of the most consistent ingredients to measure by volume, because the crystals don't compress. One US cup weighs 200 g, so it is easy to convert in your head: ½ cup is 100 g, ¼ cup is 50 g.

Caster sugar

UK and Australian caster sugar has finer crystals but weighs about the same per cup, and it dissolves faster in meringues and sponges. You can use it gram for gram.

Tablespoons of sugar

A level US tablespoon of sugar is about 12–13 g and a teaspoon about 4 g. For small amounts in sauces or dressings, just use your spoons.
